This is what i cooked for dinner tonight. 100% Vegan. 100% Plant-based. 100% Healthy.
The sweet potatoes were sliced, drizzled with olive oil, sprinkled with salt and pepper and topped with a few sprigs of rosemary. I roasted them in the oven for 35 minutes on a baking tray.
Meanwhile, I shallow fried two cloves of garlic in a little bit of olive oil and gently warmed the pinto beans in water over anther hob.
Once the beans were starting to simmer, I drained them and tossed them into the pan with the garlic. I gave it all a stir and drizzled in a teaspoon of Truffle Oil and some sea salt.
The kale was steamed for 15 minutes. Once cooked, I tossed in some goji berries and seasoned with a little sea salt and cracked black pepper.
The Kale made the base of the dish and once laid out I drizzled a little lemon juice over the top. I spooned the beans over the kale and the arranged the sweet potato on top.
I finished the dish by pouring some tahini over everything.
Voila! Tasty dinner with no animals harmed (:
